No, Miyabi knives are not dishwasher safe. All high end knives should be hand washed with a mild detergent, and a scratch free cloth in lukewarm water and then immediately dried.

 

Miyabi Koh Chef Knife Review: 8-Inch Chef’s Knife


When it come to a Miyabi Chef’s knife this is a great place to start. The Miyabi Koh chef knife is an affordable knife and comes in three separate sizes, 6 inch inch, 8 inch, and 9.5 inch.

Visually all three knives look the same so it’s up to you to decide how much knife you need to get the job done.

The knives core are made from VG-10 Japanese steel. Then there are 64 layers of Damascus steel on top of it making it a beast in the knife area. These two steels makes these knives incredibly durable and able to hold an edge much longer than other chef knives.

It boasts “Scalpel like sharpness” and it’s thin Japanese blade profile of 9.5-12 degree edge angle and true katana edge makes it an incredibly sharp knife.

The knife comes with a 61+ Rockwell Hardness rating and in all of my knife reviews this is the hardest knife I have seen to date.

The knife is a full tang, so you can rest assured it’s better for usage and less susceptible to breaking which, let’s face it, when you are spending money on a quality knife it’s a good thing to know.

Looks wise it has a beautiful flower pattern making it visually appealing for pros and new users alike. The lines in the knife handle are unique and give it a very distinguished look.

The octagonal handle is a great tribute to custom knife making and precision. If you are looking for a good entry level knife at an affordable price point, this is it.

Miyabi Birchwood Review: SG2 8-Inch Chef’s Knife

 

This chef’s knife is a step above the Koh. and the reviews seem to agree to that. Everything has been considered with this knife. From the packaging, to the cutting out of the box it is an incredibly sharp knife. It will definitely help you with all of your kitchen prep work and other cutting jobs that you need to get done.

Simply head to the Amazon page and you can see people cutting with it right out of the box. It cuts a tomato hands free which is pretty impressive on it’s own because it’s nearly impossible to cut a tomato without holding it. It’s something that is only possible with a super sharp knife and this chef knife is it!

The knife is made with SG2 steel a micro carbide powder steel, which allows for the thinly authentic Japanese blade profile, The 100 layers of steel finished with a Damascus flower demonstrate the care that is given to making these knifes.

The Karelian Birch handle is beautiful and definitely is a nice looking knife that does more than just look pretty. The end of the handle (the handle cap) has a logo of Miyabi.

Review of the Miyabi Kaizen 8″ Chef’s Knife:

Kaizen is Japanese for “improvement”.  It would certainly seem like Miyabi Kaizen chef’s knife is making strides to this line and establishing it as a premier knife in the Chef’s knife category. The linen pattern and mosaic pin coupled with the red accent spacers make this a truly beautiful knife. It’s extremely sharp and will get the job done.

Miyabi Fusion Morimoto Edition 8-Inch Chef’s Knife

The Miyabi Red Morimoto Edition 8-Inch Chef’s Knife has a nice red accent, triple rivet handle that allows for easy cutting and a balance hold. Price wise it’s the middle of the road for the Miyabi line. It is just as sharp as the other Chef’s knives reviewed in this article. The main different is the hardness and the handle.

Depending on what your knife needs are, Miyabi makes something for you. They are a great knife company that has provided an above Rockwell hardness than we have seen in other knives.
